As International Guacamole Day approaches on 16th September, the World Avocado Organisation (WAO) is inviting everyone to celebrate with a fresh and vibrant recipe that’s perfect for sharing – whether you’re outdoors enjoying the sunshine or hosting a chic gathering at home.

Ingredients:

  • 2 avocados
  • Juice and zest of 1 lime
  • 1 teaspoon of crushed red pepper
  • 1 garlic clove, grated
  • 1 spring onion, finely chopped
  • 4 tablespoons of fresh coriander, finely chopped (save some for garnish)
  • 1 tablespoon of pickled ginger, chopped
  • 1 tablespoon of brine from the jar of pickled ginger
  • 100g of pomegranate seeds (save some for garnish)
  • Sea salt and pepper

Optional garnish:

  • ½ avocado rose

For serving:

  • Tortilla chips

Method:

  1. Halve the avocados, remove the pit, and peel off the skin.
  2. In a small bowl, mash the avocado halves with a fork. You can leave it chunky or make it smooth, depending on your preference.
  3. Mix in the lime juice and zest, crushed red pepper, grated garlic, spring onion, coriander, pickled ginger, and the brine. Stir well to combine.
  4. Gently fold in the pomegranate seeds, saving a few for garnish. Season with sea salt and pepper to taste.
  5. Transfer the guacamole to your favourite serving bowl. Garnish with fresh coriander, the reserved pomegranate seeds, and, if you’re feeling fancy, an avocado rose.
  6. Serve with tortilla chips on the side and enjoy!
